I had not made brownies in eons. After making these tongue pleasers, I remembered why. Lots of dishes to wash times two rounds. Once for the brownie batter, and round two for the frosting. Here is the recipe. When using cocoa powder on the stove top the alkaline will make blueing with stainless steel, yes it stains stainless steel. I do not recommend using enameled cast iron as the pan gets hot and does not cool down as fast. The key is to stir stir stir. As good as these taste, they bake rather quickly. A crowd pleaser any time of the year. (And way better than box brownies)
Preaheat oven to 350 degrees.
Ingredients you will need the following, first brownie batter:
- 2 cups sifted all-purpose flour
- 2 cups sugar
- 1 teas baking soda
- 1/4 teas salt
- 1 cup butter
- 1 cup water
- 1/3 cup unsweetened cocoa powder (I used dutch processed)
- 2 eggs
- 1/2 cup buttermilk
- 1 1/2 teas vanilla
In my kitchen aid mixer bowl, I combined the following: flour, sugar, baking soda, and salt. I then move to my stove top in a medium saucepan I combine the butter the water and the cocoa power. Stirring constantly I bring that mixture to just a boil. I remove from heat and continue to stir. I add the saucepan mixture to the kitchen aid mixer bowl. I start the mixer on speed one until all of the flour is incorporated and then turn to the mixer to a medium speed. I add the eggs and buttermilk and turn up the mixer a little higher to beat the eggs (I use my scrapper paddle attachment so it scrapes the bowl for me) I add the vanilla and beat for about a minute longer.
In a jelly roll pan (15x10x1) I pour the batter into a buttered and floured pan. Bake at 350 for 25 minutes. At close to time the brownies come out of the oven, I start making the frosting.
Ingredients you will need for the frosting:
- 1/4 cup butter
- 2 1/4 cups sifted powdered sugar
- 1/2 teas vanilla
- 3 tablespoons unsweetened cocoa powder
- 3 tablespoons buttermilk
In a medium saucepan combine the butter, cocoa powder and buttermilk. Bring to a boil, stirring constantly. Remove from heat, keep stirring, add the powdered sugar and vanilla at the kitchen aid mixer bowl. Mix until smooth on medium speed. Spread warm frosting over warm brownies.
You are to spread the frosting evenly. I failed to do that. Photography wise these brownies are a fail. But mind and body wise, they are delicious!
Allow the brownies to cool and cut into bars. Yum!
