Jalapeno Kettle Chip Chicken a great recipe by itself, but tonight I had an idea. This weekend I tried out a recipe for home made shake and bake chicken. Much of the shake and bake went into the freezer for a meal later. That alone makes juicy, delicious chicken in the oven.
The mixture to make for shake and bake chicken is:
- 3 C Panko
- 1/2 teas basil
- 2 teas garlic powder
- 2 teas onion powder
- 1/2 teas oregano
- 1/2 teas parsley
- 1 teas fresh ground black pepper
- 1/2 teas chili powder
- 2 teas salt
- 2 tsp sugar
- 1/4 c vegetable oil
Mix the above ingredients in a bowl, making sure there are no clumps of oil. Transfer to a sealer bag such as zip loc for shaking of the chicken. You will not need to use all of your mixture. Less than half for us using 8 chicken legs. The bigger the pieces of chicken, the more you use. Seal unused portion in an air tight container. I store mine in a freezer bag. Refrigerate. If you so choose to make shake and bake chicken, for bone in chicken legs preheat/bake at 425 degrees for 40-45 min.

Jalapeno Kettle Chip Chicken
Using 2 large boneless/skinless chicken breasts, cut in half and place in the fridge in the following mixture:
- 1 c buttermilk
- 1/2 teas salt
- a dash of cayenne pepper
Soak chicken for atleast 30 minutes. You can brine the chicken for up to 24 hours but find it is not necessary.
In a bowl for dry ingredients, mix:
- 1 Bag of Smashed Jalapeño Kettle Chips (I use the smaller bag for two breasts. Cooking for a crowd, buy the larger bag)
- 1 c Panko (here is where I substituted panko bread crumbs for the shake and bake)
Remove chicken from buttermilk. I usually scrape the excess liquid off on the edge of the bowl. Dredge in the dry mixture. You may have to apply pressure to keep dry ingredients stuck to the chicken. On a baking sheet whether is it s a cookie sheet, a jelly roll pan, or a cake pan, place dredged chicken on parchment paper. Any dry mixture left over? Simply do not let all that flavor go to waste and sprinkle on chicken, and bake in a preheated oven 375 degrees for 35-45 minutes. Lots of heat, lots of flavor, and oh so easy!
