I think this beer has a sense of humor. There is an infant on the label, and it is considered a breakfast stout. Now only soused people have beer for breakfast, amiright? The brand I used this time was by Founders. The ingredients in the beer consist of chocolate, coffee, and oatmeal which makes a lovely cake.
The recipe is as follows:
- 2 C all purpose flour
- 3/4 C unsweetened cocoa
- 1 Teaspoon baking soda
- 1/4 Teaspoon salt
- 1 C brown sugar (Light)
- 3/4 C butter softened
- 1/2 C sugar
- 1 Teaspoon Vanilla
- 3 eggs (room temperature
- 1 C stout (room temperature)*
- Frosting of your choice (see cream cheese recipe that follows)
Preheat your oven to 350 degrees. Spray a 9 X 13 pan with cooking spray. Combine flour, cocoa, baking soda, and salt in a medium bowl.
In a separate bowl, beat brown sugar, sugar, and butter on medium speed until light and fluffy. Add vanilla. While mixer is going add one egg at a time making sure to beat after each addition.
Add flour mixture alternating with stout, beating after each addition. Pour batter into prepared pan. Bake for 35 to 40 minutes or until a toothpick inserted into the center comes out clean. Cool completely before icing your cake. The beer acts as a leavening agent and makes a beautiful cake!
Cream Cheese Frosting recipe
- 6 oz cream cheese, softened to room temperature
- 1/4 C butter, softened to room temperature
- 3 – 4 C powdered sugar
- 1 Teaspoon vanilla
- 1 – 2 Tablespoons milk
Beat cream cheese and butter with electric mixer until creamy. Sift powdered sugar into creamed mixture. Add vanilla, and beat until smooth. Some days this recipe takes less sugar and sometimes more. Use however much you like. Add a couple Tablespoons of milk to assist in spreading of the frosting. Beat again until smooth. Ice cake. Mmmmmm delicious!
