Reading It’s a T sweets day blog I came across her Glazed Pumpkin Bread. Hop on over to her site for the recipe. This sounded delicious and promised myself I would make it sometime during the holiday as I had all the ingredients. Today was the day!
On a bit of a side note, I only have one bread pan so I had to improvise with the tools in my kitchen. It would either be cupcakes or bundt. I thought this would look delicious as a bundt cake too. So I referenced all my other cookbooks to make sure the amount in this recipe was not too much. The ingredients seemed less, but actually this batter bread has great rise to it, so if I make it again I will have to tailor the recipe to fit my bundt.

Now to get it out of the pan. I will admit I have always feared the famous sticking to the pan. Next time I will spray it with canola oil cooking spray instead of spreading with shortening. It came out. There were a few imperfections, but once you add the glaze and nuts, no one can ever tell. On mine, for the holidays I gave it a nice sprinkling of powdered sugar to resemble snow, and added walnuts too. MMmmmmmmmm!!!! Thank you Tracy for sharing this recipe for all of us readers. This is beyond delicious and way better than what I had planned for my can of pumpkin. It is still cooling down and will be snarfed down after dinner.
