With ample food brings ample leftovers. So what did you concoct out of this years meal? One day of cooking lasted us three days, and it was so nice not to be in the kitchen for so many hours in a day.
Of course we had turkey, potatoes, corn, gravy, stuffing, and pie leftover. That made a couple meals itself just warmed up on a plate. Then I got lazy and shredded the turkey into smaller bites and put it in a small pot on the stove and added barbecue sauce and fried the boiled potatoes leftovers for bbq sandwiches and fried potatoes (aka hash). I also cubed some turkey and boiled some egg noodles in chicken broth which made quick soup.
If you had leftover potatoes and deviled eggs, potato salad would have been part of an easy meal. But our potatoes ran out before I could make this meal. I also could have made a salad with romaine lettuce, shredded carrot, shredded cheese, cubed turkey, and dressing for the croutons, but did not have all these ingredients in my kitchen. You could also make a chicken salad type sandwich with the eggs and turkey. I did not have enough to make a batch of this. The 15 lb turkey is now gone, what little remained went to the cats.
Each year I make this meal my list will grow for great variety and less monotony for our mouths.
