Yes! Delicious, easy candy like bars you can make at home.
The holidays are about about a month away. These bars will be a huge hit for any crowd. I usually make a pan of these for us, but have made them for others and am always giving out the recipe because they get oooos and aaaahhhhs.
The hands on time for this dish is about 15 minutes. Total preparation/cook time is about an hour and 25 minutes (most of this time is cooling time).
You will need:
- 2 c uncooked quick-cooking oats
- 3/4 c firmly packed dark brown sugar (recipe to make your own here)
- 3/4 c all purpose flour
- 3/4 c butter, melted
- 1 large egg
- 1 c light corn syrup
- 1 c granulated sugar
- 1 c creamy peanut butter
- 4 c crisp rice cereal
- 1 pkg semisweet choc chip morsels (12 oz)
- 1 pkg peanut butter chip morsels (10 oz)
- 1 cup chopped dry roasted salted peanuts (sometimes I leave the nuts whole)
Preheat your oven to 350 degrees. Combine first 5 ingredients in a medium bowl. Press firmly onto bottom of a lightly greased 15 X 10 jelly roll pan (this mixture will be thin). Bake for 12 minutes. Let cool on a raised surface like a wire rack (leave it in the pan).
Microwave corn syrup, sugar, and peanut butter in a large microwave safe glass bowl at high 2 minutes or until melted and smooth, stirring at 30 second intervals. Stir in cereal (work fast because when you stir in the cool cereal it will cool the mixture down). Press this mixture firmly over the baked oat mixture.
Microwave chocolate and peanut butter morsels in a microwave safe glass bowl at high for 1 to 1 1/2 minutes or until melted and smooth, stirring at 30 second intervals. Spread over cereal mixture. Sprinkle with chopped peanuts. Cool for 45 minutes and cut into bars.
I find it is best to leave these in the refrigerator, otherwise, they they melt quickly in the hands. As a note, the bar that is pictured is rather rich for one person. I recommend cutting the bars to half this size. Enjoy!
