Porcupines, Potatoes, and Corn

Porcupines are my favorite dish.  I could live on potatoes as long as I have just butter and salt and pepper.  One cannot go wrong with corn.

Today however, we will focus on the porcupine meatball recipe.

• 1 beaten egg
• 1 can condensed tomato soup divided
• 1/4 c long grain rice (sometimes I add a bit more to make the dish go a little further)
• 1/4 teas onion powder
• 1/4 teas black pepper
• 1 lb. lean ground beef 90/10
• 1 teas Worcestershire sauce
• 1/2 teas dried oregano

Preheat oven to 400 degrees.  In large mixing bowl combine egg, ground beef (uncooked), onion powder, pepper, rice, Worcestershire sauce, 1/4 c tomato soup.  For best results when using oregano, place dried oregano in the palm of your hand and rub both hands together over bowl to further crush the oregano.  This spice will release its oils and enhance the dish, just right.  After contents of bowl are mixed together, using cookie scoop, scoop into brazier dutch oven.  Pour remaining tomato soup over raw meatballs.  Cook uncovered for 30 minutes.  Cover and cook for an additional 30 minutes.  Serve with boiled potatoes and sweet corn.

I have doubled this recipe before with no issues.  This recipe I adapted from my better homes and garden recipe book with a few changes.  For years I made this with milk (omit the egg) and minced onion instead of onion powder, salt substituted for Worcestershire sauce.  If using table salt do not double it.  Nothing more satisfying than meat and potatoes eh?  Enjoy!
